Lists : set a default value

Hello,

I have configured a “Country” list as an extra profile field. The list contains circa 200 entries and I would like to save some hassle for the new subscribers.

1) Is there a way to set a default value to one of the countries, one that would already be set as default on the subscription form ?
2) Is there a piece of documentation with all the fine details for configuring list fields ?
